Eat ME
Our garden is all about arugula these days, and we've replicated the fabulous arugula salad recipe from Massimo's in Bangor. You'll need a quarter pound of fresh arugula leaves, from your farmers market, of course. For the vinaigrette, whisk together 1 part freshly squeezed lemon juice, 3 parts olive oil and 1 garlic clove, smashed into a paste. Toss arugula and vinaigrette, and top with Pecorino Romano shavings.
